Overflowing Smoothie of Love

 Is there a better way to get one's attention? 
I didn't think so.
Behold, the tropical smoothie of love.
Why love? Because it was pretty darn good!

Pineapple
freshly squeezed lime juice
lemongrass
spinach
parsley
hemp seeds
fresh coconut water
a crumbled carrot cake ball and goji berries adorned the top.
 Delish.

So, remember when I made some Kim Chee? I'm out. It was the best stinkin' (literally) kim chee ever. And I went for a repeat performance with this one:
Although slightly different, this one included more red cabbage and slightly baked butternut squash. Also, some napa cabbage, ginger, leeks, salt (of course), carrots, and hot spices.
Massaged with salt and spiced
Ta da!
 This batch should be done in a day or two. I can't wait.

Tangy Cilantro Dressing (raw, vegan, and good)
Based off of this recipe by The Whole Life Nutrition Kitchen's for Pepper-Mint Dressing, which I WILL be making soon, but I only had cilantro.

Ingredients:
  • 1/2 cup packed fresh cilantro
  • 1/4 cup freshly squeezed lemon juice
  • 1 large garlic cloves, peeled
  • 1 small shallot (optional)
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon sea salt
  • 1/2 cup extra virgin olive oil
  • drizzle of agave (about 1 tsp)
Throw all ingredients, except oil, in blender.
Give it a whirl until fully blended then stop and add the oil.
Then add greens to the dressing. Right now I'm obsessed with Mache greens. They're just so cute and taste so good. Besides that, I'm really not sure why I like them so much...
Add a little pepper and some salt with a few thinly sliced onions and wa-la! You've got yourself a pretty green salad.
I enjoyed my salad with some baked butternut squash and nutritional yeast.

And that about wraps up today's post. Are you excited about tomorrow as much as I am?? (Yep, I'm a dork)

It's almost spring, officially! Tomorrow is the Spring Equinox, first day of spring. Man, am I ready for the warm weather and bright sun.

I have a special (well special to me) post planned for tomorrow. Full of spring inspired cleaning... sounds great, huh!?

I've seen those carrot cake balls floating around a couple places and they look so good! You know I love a topped fruity shake :)

My smoothies are always overflowing too. To the point that the last couple I've made end up being 2 cups worth. And I drink them both!

So, the kim chee is just the veggies and spices, and the salt brings out the juices? I am so making some soon!

the carrot cake, the smoothies, the kim chee, all beautiful and thx for drawing attn to the vernal equinox! i was thinking about doing 108 sun salutations as is customary but dont want to do them alone and dont want to pay $25 to do them with a group LOL

Katie- yes, the salt pulls the juices from the veggies and keeps it from getting bacteria in it while fermenting. Making fermented foods is so simple, it's ridiculous. And DELICIOUS, I might add.

Averie- haha, glad you like the new pic of me! I thought it was a funny picture. I totally forgot about doing the 108 sun sals! I have no idea why or how I forgot, but i did. Did you happen to do them??
