After careful consideration, sorting through emails, laborious hours of tallying, preparing a spreadsheet, listing out all the participant names, randomly generating two winners, (man! Yes, I had a fantastic partner on this one, folks. <a href="http://makingfoodandotherstuff.wordpress.com/">Katie</a> and I worked together on the <a href="http://runlori.blogspot.com/2010/04/earth-day-challenge-wanna-play.html">Green Week Challenges</a> for Earth Day, but Katie did an amazing job at keeping all the entries sorted out and tallied. She's a very organized individual. ;)<br />

But before I let you know how out there in Bloggy Land won the <a href="http://runlori.blogspot.com/2010/04/earth-day-challenge-wanna-play.html">Green Week Challenges</a>, let me first say that everyone that entered was a winner. Everyone doing their part every day, in even the smallest way, wins. Well, actually the Earth wins but I think that is our mission.<br />

Now, I don't have the exact recipe. I asked the boyfriend if he would jot it down for his stuffed-pepper-fans but he said he really didn't remember it. So, instead, I'm going to list ingredients that were used and you just get to add the amounts that suit <i>you</i>. Because really, isn't cooking all about trial and error and just playing around?<br />

<li>Brown rice, quinoa, or other grain, cooked</li>
<li>White onions, diced</li>
<li>Mushrooms, *diced into small squares </li>
<li>Green onions, sliced</li>
<li>Chickpeas</li>
<li>Cilantro, roughly chopped</li>
<li>Tomatoes, fresh and diced, or canned</li>
<li>Salt and pepper</li>
<li>Italian herb seasoning OR equal parts of dried parsley, oregano, marjoram, basil, rosemary, thyme</li>
<li>Cayenne pepper<span style="font-size: x-small;"><span style="font-family: arial,helvetica;"><br />
</span></span></li>
<li>Garlic (may or may not have been present)</li>
</ul><i>*To easily dice mushrooms, use an egg slicer, slicing the mushrooms one way, and then the other. Makes perfect dice sizes every time!</i><br />
<br />
Sautee onions and mushrooms in a pan with olive oil until soft. Add green onions, one extra bell pepper, chopped, all spices, rice, garlic and chickpeas, and heat for another few minutes.<br />

Scoop out of the innards and set aside. <br />
When the rice mixture is finished cooking, add in the cilantro and tomatoes. Now is time to stuff the peppers (full, full, full) and top with it's 'lid.'<br />
Bake the peppers, sitting upright, in a 375 degree oven for 30-45 minutes. Top with goat cheese, below, or eat as is!<br />

For me, doing my part, I have been <u>washing loads of clothes in cold water</u>, <u>hanging most clothes to dry</u>, <u>stopping the dishwasher at the "dry" cycle and air drying them</u>, <u>making veggie dishes</u>, <u>daily green smoothies</u>, we only <u>use cloth napkins</u>, so that's in, <u>the boyfriend even bough grass fed/farm raised chicken for himself last night</u>! Now that is saying something. Aside from that we usually bring our own bags to the store, use Sigg bottles, ONLY use glass or plastic food containers-reuse right?, and many more. It's fun, it usually saves money, and it helps the Earth and all of us on it.<br />

I'm so happy that so many people have participated in Green Weeks (even though it's still not over!) and that most of us do these things on a daily basis! Keep up the great work!<br />

Interesting little guys, but so delicious. The idea was based on the very <a href="http://www.rawgoddessheathy.com/2010/03/moon-pies-recipe-ebook.html">original recipe</a> and <a href="http://www.rawgoddessheathy.com/2010/03/moon-pie-challenge.html">Moon Pie Challenge</a> by Ms.<span>Heather Pace, owner of delicious blog, <a href="http://www.rawgoddessheathy.com/">Sweetly Raw</a>. I did not get a chance to enter the contest, but the entries were amazingly creative. Although mine could have been a worthy contestant.</span><br />

One of the best ways to help out the environment, your health, and your wallet, is to plant a garden. But some people are not so lucky to have space outdoors to do so. Here are some tips to get your <b>indoor garden</b> up and running (or sprouting). (<a href="http://www.eucalyptusmagazing.com/">source</a>)<br />
<b>Location, location, location</b>: Select a spot inside your home that gets at least four hours of sunlight a day. Florescent lights or metal halide grow lamps may be a good alternative, if no natural sunlight is available. <br />
<b>Choose Containers</b>: Wood, clay, or ceramic containers work well for countertop gardening. Be sure to choose containers with proper drainage and consider sizes. Small rows of pots work well for multiple herbs, and larger pots for vegetables. Avoid overcrowding the seedlings and plants.<br />
<b>Pick Your Plants</b>: Basil, parsley, oregano, sage, thyme, and rosemary are the easiest herbs for indoor growth. Spinach, leaf lettuces, endive, cherry tomatoes, and peppers make for great indoor vegetable plants.<br />
<b>Add Some Soil</b>: Depending on what you decided to grow, starting from seeds, seedlings, or cuttings is up to you. Each container, though, should have a sufficient amount (four parts) of potting soil, mixed with one part organic fertilizer or compost. Be sure to read the seed packet instructions for depth, light, and water required for each plant.<br />

Since my deducting phase of playing with certain food symptoms has finished (that was a mouthful to say.. pun intended), I have now solidified the fact that dairy, undoubtedly, causes some unwanted symptoms in my body. Within hours of consuming any dairy, I have mucus and feel... a little off. I did a little exerpiment with regular greek/cow's milk yogurt and goat's milk yogurt. Verdict is that my body likes the goat yogurt, well can process it without any side effects. The cow's yogurt, not so much. I went a week with only eating goat yogurt and then last night I had some greek yogurt. Today, all mucusy! It's crazy how fast that comes on. But at least I know what works and what doesn't.<br />

As you may or may not have read on my little "What Runs Me" (about me) section... <br />
I do a little <a href="https://thomas.myrandf.com/">skin care consulting</a> in my spare time. WELL, I've decided to take this a step further and create a full on business with this. Honestly, I'm not diggin' my desk job all that much, and cannot see myself working for someone else for the next 40 years (YIKES!). So, I'm going into business for myself! For now, at least, I'm keeping my full-time job but hopefully, I will be able to let it go soon enough.<br />

So, some background as to what I am doing and how I got started:<br />

I suffered from acne since I was in my early early teens. And nothing worked. Dermatologists prescribed creams and pills and really, it did not help much. I had tried Proactiv in the past but it was too harsh for my skin.<br />

The weekend is among us, folks, and I am stoked for that simple little fact. I am filling this weekend with more 'me' time than I care to. Boyfriend is in lovely Las Vegas for the next couple of days spending his days getting <strike>wasted</strike> <strike>belligerent</strike> <strike>participating in male gorilla bonding</strike> <strike>blowing money at Craps</strike> <strike>nursing a hangover upon waking at noon with beer</strike> enjoying the sun. Well, Mr. Boyfriend, I can enjoy the sun, too!<br />
<br />
My agenda for my Friday, Saturday, and Sunday is as planned:<br />

Friday<br />
Make dinner, watch a movie, play on the internet while watching the movie (I'm a <i>terrible</i> movie watcher, fyi), and going to sleep (probably earlier than anyone should on a Friday night).<br />

Make a breakfast of champions, aka a Green Potion (smoothie), attend my third personal training session with my boot camp instructor (yaaaaaaaay!), hit up Whole Foods and maybe a little <a href="http://www.cafegratitude.com/">Cafe Gratitude</a> (um, yum!), post the best blog post ever (GET READY!), donate some clothes to Good Will... as you can see my weekend is just full of <strike>nothing</strike> <strike>boringness</strike> <strike>food?</strike> <strike>patheticism</strike> fun.<br />
<br />
In fact, my weekend is going to be so much fun that I even went to the library to check out a book that <a href="http://makingfoodandotherstuff.wordpress.com/bookshelf/derby-girlwhip-it/">Katie</a> recommended... but it was checked out. Bummer. So, Plan B, I'm cleaning the entire house. Woo- hoo (can you sense the sarcasm in that typing?).<br />

But seriously, I'm actually excited to have some 'me' time. I can catch up on a lot of things I've been neglecting. If anyone has any books or movies they recommend, send 'em my way!<br />

<b>Lori's Warm Sweet Pears with Lemon Yogurt and Hemp Seeds</b><br />
<ul><li>1 pear, halved and cored</li>
<li>1 tsp ginger juice or crushed fresh ginger</li>
<li>1 tbsp fresh lemon juice</li>
<li>1 tbsp maple syrup</li>
<li>pinch of sea salt</li>
<li>hemp seeds</li>
<li>yacon syrup (or more maple or agave syrup) </li>
<li>more fresh lemon juice, amount to taste </li>
<li>greek yogurt (or coconut yogurt or kefir)</li>
<li>liquid Stevia </li>
</ul>Place pear halves, up side up, in a oven-safe dish. In a separate bowl, mix together ginger juice, lemon juice, maple syrup, and salt. Pour over pears. Put into the oven to broil, on low, for 5-10 minutes. When pears are heated, remove from oven and top with yacon syrup and hemp seeds. In another bowl, combine yogurt, lemon juice, and liquid Stevia drops. Top pears with lemon yogurt. Enjoy!<br />

I have also been taking notes and have drawn some conclusions based on my experiments. I will warn you, they are random. <br />

And all of you get to read about my observations. And if you don't, well, sorry.<br />
<br />
<b>Conclusion #1: Soy Milk</b><br />
I suffer from a bloated belly, upset stomach, and well, not going to the bathroom, at times. Since eating a clean diet (AND JUICING <--- do this to become regular!), I've helped take some symptoms away<b>. </b>But others are still present. I've tried everything to find out what the cause was. I've done only raw (that did help actually!), I've tried no dairy, no meat, no gluten, no yeast, lots of fermented foods, etc. It all helps but not 100%. I still get to the end of the day feeling <i>blah </i>and bloated or just plain full. <i>Until I decided to stop drinking soy milk. </i>I really don't even drink soy milk but for the last two weeks I have not had a single (once, <i>mayyyybe </i>twice weekly) soy chai from Pete's Coffee (they're just so good!). Soy milk, being the only thing I have changed from my diet, leads me to believe it is the nasty culprit. No more bloating, leaving me with a flat tummy I work so very hard for (more on that in Conclusion #3). So, yay to that. Check one for me, Soy milk zero. <br />
<br />
<b>Conclusion #2: Dairy</b><br />
Since upping my workout frequency and intensity (and secretly wanting to look like this) I've also upped my nutrition intake. Along with more calories in, I'm trying to add in 'clean' eggs and greek yogurt. For the most part, I do not include <i>any</i> dairy in my diet but hey, why not try it out and see how it goes? The eggs are treating me fine. The dairy yogurt, while it tastes pretty damn good with some liquid Stevia, chocolate protein powder, and carob chips mixed in (<i>um, delicious</i>), has presented some other symptoms. Since consuming this small amount of dairy, I'm feeling a bit more mucus-y. And I know that dairy is mucus forming. Research has proven this. So, for now, I'll see how it goes with the yogurt. Maybe goat yogurt may be more up my alley... experimentation continues with this one.<br />
<br />
<b>Conclusion #3: MMA</b><br />
Alternate titles for this post were 'Paying for Torture' or 'Double Days' but decided against them due to the lack of generality they would give. <i>Anyway</i>, I've deducted that <a href="http://en.wikipedia.org/wiki/Mixed_martial_arts">MMA</a> (or Mixed Martial Arts) participants and instructors are crazy. That can be taken however you'd like but they really are.<br />
<br />
For example, I told you about how I'm now having personal training sessions with my boot camp instructor. Boot camp is one class in the whole MMA program and this class really, really brings a full body, strength and endurance workout. But I needed more. (<--yes, that was a <i>little </i>bit of bragging...) So, I'm training two extra times a week with an INTENSE workout with a little more strength built in. So far, so good. I've had <a href="http://runlori.blogspot.com/2010/04/nothing-better-than-good-beating.html">two sessions</a>, yesterday being one of them. [Insert example one] Yesterday morning I did the regular hour of boot camp, then after work, did another hour of private training. It was killer but I feel amazing from the workouts; strong.<br />
<br />
This morning, I made it to MMA kickboxing. Honestly folks, I've <a href="http://runlori.blogspot.com/2010/03/workin-hard-for-dinner-and-dessert.html">said it before</a>, kickboxing is the worlds best workout. Today's class was a bit more on the boot camp/plyometric side, but still great. We worked on core today. [Insert example two] With a partner, we took turn taking body shots... and I'm unfortunately not talking Tequilla. Literally body shots to the stomach, with gloves on (oooh and that's not all). It was awesome (see <i>crazy!</i>). Here's how it went down:<br />
<blockquote>Standing against a wall (or boxing ring's post), back flat, hands above head grasping opposite elbow, your partner, with boxing gloves on, proceeds to <i>punch your stomach area</i>, top, middle, sides by ribs, for one full minute. Your job is to keep your hands raised and flex your stomach as much as possible. <i>This was so much more fun than you can imagine. Honestly. Wow.</i></blockquote><blockquote>Second body shot exercise included an eight pound medicine ball. Uhhh, huh. With a partner, you lay on the ground, legs up at a 90 degree angle, hands behind head. Partner stands beside you with the medicine ball and <b><i>then drops it </i></b>on your stomach, while you crunch up, flexing, to receive it. This continues for a count of 20 drops, then gladly, you drop your knees down to the right and get ready for the medicine ball from hell to drop onto your obliques and rib area. Repeat 20 times then switch sides. <i>Again with the fun thing... But I really liked the first exercise better... </i></blockquote> Both of the above moves can be done with a partner of choice, hopefully those, they love you. The key, well, just take it.<br />

<li>1/4 cup cilantro or parsley, coarsely chopped</li>
<li>1/2 cup Greek yogurt (I used Fage, LF yogurt. To Veganize just a sour(ish) coconut yogurt) </li>
<li>1/4 cup goat or feta cheese (optional)</li>
<li>Pinch of salt and couple grinds of pepper</li>
</ul>Bake the squash, cut side down, on parchment or foil lined baking sheet at 375 degrees until tender (about 35 minutes). While squash is baking away, chop spinach and cilantro and put into large bowl. Add the remaining ingredients and mix well.<br />
When squash is tender, remove from oven and scoop out (carefully, it's one hot squash!) (yes, corny) and add to the spinach-yogurt bowl. Mix well and serve.<br />

And to clarify, there's nothing better than a good beating in the gym, working out HARD, and reaping the rewards. Not really getting beaten. That's probably not as good.<br />

As most of you know I take boot camp and kickboxing classes through the gym's Mixed Martial Arts program (although where is irrelevant to the story). On Saturday, I was the only lucky student in class so my instructed and I felt it was the perfect opportunity to <strike>kick my ass</strike> pick up the intensity a bit. When I say <i>a bit</i>, I really mean <i>kick my body into high gear and see if I can hold on for the ride</i>. Well, I can. Since I started with the classes, my fitness level has excelled and the classes, although they are getting harder, are just not hard enough. For example, a typical rest between exercises is <i>three minutes of jump rope</i>. Honestly, I remember about a year ago, when <i>thirty <b>seconds</b></i> was rough.<br />
<br />
Back to my original train of thought, since I was the only person who made it to class on Saturday, Sean, my boot camp instructor, set out to actually have my tired at the end of the hour session. Mission achieved. He had me doing non-stop movements with some new features added into the mix.<br />

I think I had a "runner's high" for about 4 hours after that class. I left shaking, sweaty, beat. Glorious. I'm certain that there are few things in life better than a crazy hard workout like that one.<br />

So, conclusion. My instructor has agreed to be my personal trainer for two days a week, aside from the boot camp and kickboxing classes I take. I am very excited! After reading about <a href="http://www.loveveggiesandyoga.com/">Averie</a> wanting to do a <a href="http://www.loveveggiesandyoga.com/2010/03/blogger-meetup-whole-foods-bar-verdicts.html">figure competition</a>, I got the itch to work harder to achieve better results. I want a sculpted body and am going to get there. I'll be posting more workouts, or what I can remember of them, as they come and hopefully snapping some pics of my favorite ab/core workouts. I've got some killer ones to share!<br />
<br />
And if working out hard is in the plans then so is eating well. Calories burned is calories earned and you <i>need</i> to fuel a working body.<br />

<b>Blended Salad</b>, literally. Last night's salad blended into a liquid lunch. See below.<br />

And that's as far as I've gotten with my planned meals so far. I also have a red pear and Kombucha waiting for me. I'm not doing the whole week of the Juice Club's week juicings but I'm going to try for a couple of days to see how I feel. So far, so good.<br />

But, last night, I was not liquefying my life so I had myself a <b>Kabocha Bowl</b>.<br />

Really good. To make your own Kabocha Bowl at home, simply cut a Kabocha squash in half, scoop out insides, and bake both sides cut side down (350 degrees until tender).<br />

And then dressed with tahini, apple cider vinegar, spicy mustard, tamari, ginger, garlic, and cayenne pepper. No oil needed for this guy. Power salad right there. <br />

Has anyone read <a href="http://articles.mercola.com/sites/articles/archive/2010/03/30/beware-of-the-agave-nectar-health-food-fraud.aspx">this article </a>by Dr. Mercola, <i>Beward of the Agave Nectar Heath Food Fraud</i>???? If not, <a href="http://articles.mercola.com/sites/articles/archive/2010/03/30/beware-of-the-agave-nectar-health-food-fraud.aspx">read it</a>. Especially if you consume agave nectar. Now, I don't want to get into all the hype. I don't want to get on board with a food frenzy, but if this article is grounded on facts, then agave syrup is worse than high fructose corn syrups. Um, is anyone else a little grossed out by this claim?<br />

Just food for thought (yes, pun intended)... The media does a great job at letting us <i>know </i>what is <i>good </i>for us and what is <i>bad. </i>Thanks Media! So, what do you think of this claim? Personally, I do not consume large amounts of agave but I used to. I guess the sugar solution is to use whole fruits for a sugar source, if you need the sugar, that is.<br />

Apparently I was <a href="http://makingfoodandotherstuff.wordpress.com/2010/03/29/stuff-i-made-this-weekend/">not the only one</a> craving some <a href="http://www.loveveggiesandyoga.com/2009/10/raw-vegan-chocolate-chip-cookie-dough.html">raw cookie dough</a>, raw chocolate chip cookie dough by Miss <a href="http://www.loveveggiesandyoga.com/">Averie</a>, that is. Averie's recipe is simple, quick, and tastes amazingly good. I however, having to always change <i>something </i>in a recipe, probably put her recipe to shame.<br />

Her recipe calls for a blend of a few key ingredients, one of which is cashews. Don't get me wrong, I have nothing against cashews but I was looking for a low fat, lower cal dessert. All I had in the fridge for a "filler" was boiled chickpeas. I know, I know. You're probably thinking to yourself right now, <i>Chickpeas? That sounds disgusting. </i>And I'm not going to lie to you and tell you they were fantastic. I don't recommend using chickpeas in replace of cashews for a sweet creation. <br />

Not so much. Although they weren't horrible in the "dough" form, I decided to bake them as you would a cookie. Let's just say, dough form is much better.<br />

Haha! Who am I kidding? That's just silly talk. (although then I would have had some amazing <a href="http://www.loveveggiesandyoga.com/2009/10/raw-vegan-chocolate-chip-cookie-dough.html">raw cookies</a>...)<br />

More things I made included filling in the raised garden bed with top soil. We're just waiting on the little sprouts to get a bit stronger and then we're planting those bad boys.<br />

Making coconut kefir is the easiest thing ever. One version that brought me great results, includes opening a can of coconut milk, opening a packet of kefir starter (mine from Whole Foods), and mixing them together in a glass jar. Add a little water, mix again, then set on the counter for 24 hours. Wala! You're in business. Coconut kefir is a fermented mixture of coconut. It's kind of like yogurt or sour cream. It's creamy and sour and tastes great in sweet or savory dishes.<br />

I've been using mine for both dessert and dinners. Some examples of usages is topping your giant <b>vegan chickpea burrito</b>.<br />

Since then we have partaken in the sweet lemony liqueur but only a few times. Usually we drink it as an after dinner digestif with dinner parties and special meals.<br />
<br />
As I was doing some spring cleaning of the refrigerator, I found the limoncello bottle. That, lemons, and freshly made almond pulp (from making almond milk), I knew what had to be done.<br />

Based from a recipe for Raw Lemon Poppy Seed Cake from <a href="http://www.amazon.com/Sweet-Gratitude-New-World-Desserts/dp/1556437447">Sweet Gratitude</a>, the raw limoncello cake was born.<br />
<br />
<b>Limoncello Cake</b><br />
<ul><li>1 1/2 cups almond meal</li>
<li>1/2 cup coconut flour</li>
<li>1/3 cup coconut oil</li>
<li>1 tbsp vanilla extract</li>
<li>1/4 cup lemon juice</li>
<li>1/4 tsp salt</li>
<li>1/4 cup agave</li>
<li>taste and add more agave or Stevia to sweeten to your liking</li>
<li>handful of raisins or other fruit of choice</li>
</ul>In a cake mixer (for texture purposes), combine all ingredients and beat until combined. This could take a few minutes. Heating the coconut oil is helpful for this process. Mixture should be a cake-like consistency, but a little more moist.<br />
When fully combined, scoop batter into a spring form pan and set in fridge or freezer to set.<br />

Moving onto the frosting...<br />

<b>Limoncello Frosting</b><br />
<ul><li>1/2 avocado</li>
<li>1/2- 3/4 cup coconut oil</li>
<li>1/4 cup lemon juice</li>
<li>2 oz limoncello liquor (more if you're feeling in the limoncello mood)</li>
<li>dash of salt</li>
<li>1/2 cup almond milk (I used homemade coconut kefir to make the frosting taste sour with a cream cheese tang)</li>
<li>1/3 cup agave</li>
<li>1 tbsp lecithin</li>
</ul>Blend all except for the lecithin, avocado, and coconut oil. When fully blended, add in the last three ingredients and blend again. Taste frosting (best step of all). Adjust to your liking of sweeteness and texture. Add more coconut oil and/or lecithin if too runny. <b>Lemon Poppy Seed Polentoats</b><br />

<li> 1/2 cup oats</li>
<li>3 cups water</li>
<li>dash of salt</li>
</ul>Heat all in a saucepan on high until starts to boil. Turn down to low and simmer, covered, for about 10 minutes. <br />

To make the lemon poppy seed add-in, combine applesauce, fresh lemon juice, vanilla extract, pinch of salt, and a few liquid Stevia drops (or agave). Poppy seeds are optional but fun. Add as much or as little of each ingredient until it tastes perfect to you.<br />
