First Course:
Green Juice with cayenne pepper and tumeric
Second Course:
- 1 head of cauliflower
- 1/2 package of peas, frozen
- 1/2 red bell pepper, chopped
- 1/4 white onion, chopped
- 2 cloves garlic, roughly chopped
- 1/4 cup cilantro and parsley
- 1 inch piece of lemongrass
- 3 tbsp olive oil
- 1-2 tsp sesame oil
- 2 tsp ginger crushed
- Tamari or soy sauce to taste
- 1/2 cup hemp seeds
This can be served warm from the dehydrator, a pan, oven, or raw.
*I also added chickpeas to mine... just for fun.
Served with the best salad ever. Lime, lemon, and olive oil dressing with Mache lettuce (sooooo good), avocado, and thinly sliced onion.
And who the heck can eat anything without plopping hummus on top?!
Yeah, I can't either.
Third Course:
(Almost) Raw Three Berry Walnut Fig Bars
Layer one:
Pulse all crust ingredients in a food processor until it becomes sticky and combined. I left some chunks but feel free to play with the consistency.Layer one:
- 1/2 cup walnuts
- 1 cup oats
- 1/2 cup figs
- drizzle of agave syrup
- dash of salt
Scoop half of the walnut fig mixture into a glass container of choice and pack down to form a crust. Set aside the remaining crust mixture.
Layer two:
- 1-2 cup berries, frozen or fresh (I used a raspberry, blackberry, blueberry mixture)
- agave to sweeten
- 2 tsp lemon juice, or to taste
- dash of salt
Repeat Layer one and two
Now enjoy
