Monday Cookie Madness

I had a little sugar craving today. So, I did something about it. I made cookies! Even better, I made raw cookies! The best part is that all of these recipes are gluten free, dairy free, refined sugar free, soy free, and vegan.

Cacao Cookie Dough Cookies
*Recipe inspired by a recipe from Pure2Raw
Ingredients:
  • 1/2 cup coconut flour (ground dried coconut)
  • 1/2 cup soaked and rinsed buckwheat groats
  • 2 tbsp honey
  • 2 tsp vanilla
  • 1 tsp coconut oil (liquid)
  • 2 tbsp chocolate chips and raw cacao nibs (I used a broken up 85% chocolate bar)
  • dash salt
Add the coconut flour, buckwheat groats, honey, vanilla, coconut oil, and salt to a food processor and process until combined. Add the chocolate chips and cacao nibs and mix.

Roll into balls or flatten like cookies, or eat by the spoonful.
Store in the fridge or freezer.

*Optional additions that I added to half of the "batter":
1 tbsp yacon or maple syrup
dash or two of cayenne pepper, and mesquite powder- just a little added flavor that really wake up the tastebuds.



After the chocolate craving was satisfied I moved on to pumpkin. I love the variety of raw desserts!


Cinnamon Pumpkin Cookies


Ingredients:
  • 1/2 cup coconut flour (ground dried coconut)
  • 1/2 cup soaked and rinsed buckwheat groats
  • 5 soaked dates
  • 1 tbsp vanilla protein powder
  • 1/2 to 1 tsp almond extract
  • 1 tsp maple syrup
  • dash of cinnamon, cayenne pepper, salt, and nutmeg
Combine all in the food processor.
Add in 1 cup pumpkin puree, fresh or canned.


Process again. Taste and adjust the flavoring to taste. Roll into balls then flatten. You can eat as is or place in the dehydrator for a couple of hours.



After I made all of my desserts for the night, I had a salad to counteract the sweetness.

Full of spinach, cabbage, sunflower sprouts, cilantro, and homemade pickled beets. Topped with a dressing of miso, nutritional yeast, orange juice, apple cider vinegar, nama shoyu, cayenne pepper, and caraway seeds. It definitely hit the spot!

Cookies look amazing :) Pumpkin ones sounds yummy too!! I do not think I have a secret power or at least I am not aware of it yet. HAHA.

haha! We all have secret powers... but they do take some time to find...

My secret power is being able to push myself in exercise.. hehe.. I'll find a "cooler" one some day.
