Baked sweet potatoes and onions,
using Japanese sweet potatoes (try them!!! they are amazing)
and regular sweet potatoes
Topped with a mixed bean hummus and fresh Italian flat leaf parsley
 
Mixed bean hummus with pepper flakes and nutritional yeast
And a side of shredded red cabbage and some Kim Chee. 


DEL-IC-IOUS.

Love Confession

I have a confession to make. 
A confession of love.

I confess, publicly, that...


I love my oven.

I know I shouldn't.
I know it's wrong.
I try to devour mostly raw foods, uncooked, if you will.
But still.
I love my oven.
 
(vegan vanilla cupffins- muffin/cupcake) 

My oven never disappoints me.
 
(baked sweet potato fries)

My oven rarely talks back (beats the boyfriend. Sorry Boy.)
(Tortilla hummus-cheese brussel sprout tahini pizza)

My oven always gives me wonderful results.
And last night's dinner was no exception.
Kabocha squash is my other love
Sliced, baked, and enjoyed!
 
  
And smothered with Vegan Red Pepper "Cheese" Sauce
 
Vegan Red Pepper "Cheese" Sauce
easiest recipe ever
 1/2 cup Tofu
1/2 large red pepper
1 tbsp miso paste
2 tsp nutritional yeast
dash of sea salt

Blend all in a blender and serve over anything!
Simple. Filling. Virtually fat free.

Random Monday

Happy Monday! What a weekend! Hope yours was full! And not just your Superbowl watchin' bellies...

I have to add that this post would have been published much earlier than it was but I left my camera at home today, and I usually gather all the pics and write the post at work... don't tell my boss...

This weekend I was pretty productive. Aside from deep cleaning the house for a little Superbowl get together at mi casa, I helped make tons of food and even made it to the local farmers market, early Sunday.
Love, love, love the atmosphere of farmers markets! The fresh, juicy, locally grown fruits and vegetables. The venders creating fragrant smells of warm crepes, fluffy falafels, and of course, raw chocolate!
Snake & Butterfly. Local company that makes some mean chocolates! Raw varieties, but also some organic and clean treats, as well. And you can order online...
Some of the best "bought" sauerkraut made. Not as great as making your own, but still very good.
And one vendor had raw sugar cane. I have never seen this stuff before, nor tried it. It's interesting. Chew then spit. Tastes pretty good.

I heart dried fruit.

Saturday, I met a friend for a little reunion. We were roommates for two years in college and had not seen each other for three years! Elissa, thanks for the meetup! I love you! Seeing you made my day!

The nice thing about winter is that you are able to be nice and warm, snuggled up with a blanket, on your couch, during downtime. I love this about rainy, cold days. I always feel so safe nestled indoors with a good book, a boyfriend, a movie, (and/)or ice cream!

I give this healthy alternative a 5 out of 5. The taste, great, and the texture was just like that of regular ice cream. The rich and creamy cashew and coconut base creates a perfect ice cream replacement. And the ingredients match up with my healthy, clean-eating standards. Oh, and the chocolate chips in there; divine.

So, what is better than eating ice cream in February? Well, making ice cream in February, of course!
