Kabocha Squash Mash
Ideas, love, and recipe manipulation from here, here, here, and countless others. But this recipe is all my own.
- 1 unsuspecting Kabocha squash, cut in half length-wise
- 2-3 cups spinach, coarsely chopped
- 1/4 cup cilantro or parsley, coarsely chopped
- 1/2 cup Greek yogurt (I used Fage, LF yogurt. To Veganize just a sour(ish) coconut yogurt)
- 1/4 cup goat or feta cheese (optional)
- Pinch of salt and couple grinds of pepper
When squash is tender, remove from oven and scoop out (carefully, it's one hot squash!) (yes, corny) and add to the spinach-yogurt bowl. Mix well and serve.
*Alternately, pop finished bowl into the oven and bake for another ten minutes to crisp the top. But please, make sure you're using an oven-safe bowl.
There you have it. Kabocha miracles happen all the time, you just have to be willing to look for them.
Completely unrelated question, but does anyone else dream about blogging? I've been suffering from anxiety blog-related dreams for the last two weeks. Am I the only crazy one here?

Guess who just so happens to have a kabocha squash, spinach and cilantro on hand, and JUST made yogurt AND has no plans for dinner tonight...until now. Awesome doesn't even begin to describe this.

i dream, well I compose blog posts in my head in my sleep. sick but true!
I sometimes dream about blogging. That's usually when I decide to cut back a bit. There have been studies that show blogging can lead to anxiety and depression. You just need to keep in fun and not stress over it too much.
I'm actually very glad I'm not the only one dreaming of the blog world! :)
And Shannonmarie, I agree that blogging should be fun... although there is a bit of pressure to... eh... perform...

Lately I seem to enjoy mashed vegetables of all sorts, and this recipe has me jonesing to try kabocha. But what really got my attention was that purple salad. What is it? Looks yummy.
