I hope you all enjoyed my meals on Saturday as much as I did. Some day we'll be able to do a scratch-and-lick blog screen for us food bloggers.... or maybe not...
As promised, here are the ingredients for the Tuna Poke that my boyfriend put together.
Great, easy, super healthy, and tasty recipe. Try it. Bonus, it looks really cool.
Tuna Poke
Sashimi grade Ahi Tuna, fresh, diced
Splash of sesame oil and shoyu (or soy)
English cucumber soaked for ten minutes in rice wine vinegar and agave syrup (2 part vinegar, 1 part agave)
Avocado, diced
Green onions, sliced
Sesame seeds
Sriracha hot sauce
Dice the tuna into small squares. Place in bowl with sesame oil and shoyu. Add diced avocado, green onions, and sesame seeds, toss all to coat. Set aside.
In a new bowl, mix together the rice wine vinegar and agave. Slice cucumber into thin rounds and place bowl with vinegar and agave. Let sit for ten minutes or so in the refrigerator.
As pictured above, using a large round cookie cutter, arrange the soaked cucumbers around the edge of the cookie cutter. Scoop tuna mixture into the middle of the cookie cutter, so the cucumbers stay along the rim.
Place tuna, cucumbers, cookie cutter and all into the refrigerator to set for a few minutes.
When ready to serve, slowly pull off the cookie cutter and top with a small amount of Sriracha sauce.
Enjoy with Sweet Potato Fries.
Sweet Potato Fries
Ingredients:
- 1 large sweet potato
- olive oil or coconut oil, to coat
- sea salt, pepper, garlic salt
Serving suggestions: Eat with large amounts of Vegan Wasabi Mayo
Easy Vegan Wasabi Mayo
So easy, I'm only going to list the ingredients that are to be placed in a blender and blended to perfection.
- Tofu (about 1 cup)
- 1 heaping spoonful Miso
- 2-3 tbsp lemon juice
- 1 clove garlic
- 1/2-1 tsp wasabi powder
- 1 tsp agave
- 2 tsp nutritional yeast (optional)
- dash cayenne pepper and sea salt
- water for blending
And what meal would be complete without dessert?

Ingredients and any amounts you'd like:
- Rolled oats
- Millet and quinoa, soaked and sprouted
- Pumpkin seeds, processed into smaller pieces
- Agave syrup and/or Yacon syrup
- Dried fruit, raisins, goji berries, apricots, etc
- Sea salt
- Cinnamon
And I just had to point out that the Tuna Poke idea came from one of mine and the boyfriend's favorite restaurants, California Cafe. Here is the one we have ordered (about every time we go there) and my boyfriend's version. The tastes, also, were so similar!
